Easy Tailgate Meal for the Mom on the Go

Tailgating – what a great time to get together with your friends to celebrate your favorite team – or just the camaraderie of families of all ages, together, having a great time!

I have so many memories of tailgating – but one of my favorite things is the wonderful food that we all bring.  Food is always something that can bring a group together – and tailgating food is some of the best.  Whether it’s a hot item or some bite-sized bits, there are always great things to eat at our tailgates.  There is always something for everyone.  Being a mom of three boys, I am constantly on the go.  I need something that does not take alot of time or effort but tastes amazing! One of my favorite items to bring is Jambalaya.  It is quick and super easy to make!  The prep work is easy and takes very little time. When I make mine, I usually make it not long before we leave in a big stockpot – and it stays warm.  No transferring dishes.  It can’t get easier than that!

This recipe is great not only for tailgating but a great warm meal at the end of a long day. (PS. Its also gluten free – which definitely helps make my belly smile) 

 

Jambalaya Zats

Best Jambalaya EVER

 

1 pkg of Zatarain’s Andouille Smoked Sausage               2 Tbs. instant minced onions

2 c uncooked instant rice                                                      2 tbs. bullion paste

3 c water                                                                                    1 tsp. salt

2 cans of stewed tomatoes                                                     ¼ tsp. ground thyme

2 cans of crushed tomotoes                                                    ¼ tsp. chili powder

1 lb cleaned shrimp                                                                   1/8 tsp. cayenne pepper

1 green pepper – chopped

 

Cut the sausages into 1-inch diagonal slices and brown.  Add remaining ingredients – except the green pepper.  Heat stirring occasionally to boiling. Reduce heat and simmer uncovered 10 minutes.  Sir in green pepper and heat. 

 

That’s it – easy, delicious meal for friends and family.
