The Family Table: Kindergarten-Easy Peanut Butter Cookies

My daughter had pneumonia yesterday on Valentine’s Day and missed all the fun at preschool. My sweet son got off the school bus and decided he wanted to make her some treats to cheer her up when she woke up from her nap.

I love this request for two reasons: it shows his big heart and it gets him cooking in the kitchen.

Cooking in the kitchen with kids can be so beneficial. Let’s face it, I spend a lot of time in the kitchen and it turns it into quality time. Also, it helps him know that food doesn’t just appear on the plate.  Time, effort, and love are poured into it…even if he doesn’t like the final product (which is every night). Lastly, it also is a great opportunity to practice fractions.

These peanut butter cookies are so easy, my kindergartener made them (with supervision).

They have no flour in them and are gluten-free. That makes them perfect for my family with Celiac-disease, but they are also delicious enough to be fitting for gluten-eaters, too.

There are a lot of variations of this recipe, but this is my favorite.  The brown sugar gives the cookie a good chew while the baking powder gives a little rise. 

Mix all the ingredients together at the same time, perfect for a beginning baker.

Spoon small rounds of dough on a parchment-lined baking sheet. I like small cookies in this house because the kids think they are getting more 😉  Also, these cookies have quite a bit of spread to them.

Then the fun part, toppings! 

Bake the cookies for 9-11 minutes at 350°.  Let cool for at least 5 minutes before removing from baking sheet.

Enjoy the treat with someone you love and a glass of milk.

Ingredients
  1. 1 cup smooth peanut butter
  2. 3/4 cup brown sugar
  3. 1 egg, lightly beaten
  4. 1 dash of vanilla
  5. 1 tsp salt
  6. 1 tsp baking powder
Optional
  1. Toppings - Hershey kisses, M&Ms, etc
Instructions
  1. 1. Preheat the oven to 350 degrees.
  2. 2. Mix together all the ingredients other than the optional toppings. It will be a very stick dough.
  3. 3. Spoon out rounded mounds of dough, between 1tsp and 1 tbs in size.
  4. 4. Add optional toppings
  5. 5. Bake for 9-11 minutes
